The edge part and polishing process were done by a craftman, the blade itself was made by machines on some phases. (most of Japanese western-style knives are made in this way.) The knfie is the knife before engraving a brand name. I was told the metal of the blade is alloy contains cobalt. You might think it looks heavy, but it weights 78 g. I know it's a bit heavier than an average petty, though, it isn't bad. This knife was made by the same maker of the new gyuto that I sell. NOTE: -The edge has not been sharpened, if you want me to sharpen it please let me know (or I ask this after you purchase.) -In case you choose a sharpening service (FREE), there would be sharpening scratches on both sides. Please understand this. -I sharpen it at 50 :50 R:L ratio. If you have your own preference, please let me know.
